Japanese Sweets: Maple Snaffles from Hokkaido

I wake up in the wee hours of the morning (4.30am) for no apparent reason today with the thought of Maple Snaffes in my head. The thought of it won't go away, my brain wants to have some, but helas we don't have any and so I will just have to write about it instead. Continuing from my previous posts on Snaffles from Hokkaido, where I talked about the original cheesecake flavor and chocolate favor, I have to say that my new favorite one is the Maple Snaffes Cheesecake. The Maple Snaffles cheesecake have the same soft and feathery texture of the original cheesecake flavor but it has an added tinge of maple syrup. The great thing is that you can taste and smell the maple syrup but yet it does not overwhelm the cheesecake. It makes the cheesecake aromatic (I like the smell of maple syrup, don't you? ) Too much of the maple syrup would make it too sweet, too little would not be enough to make it aromatic. Bangkok Dining: Sendai Ramen Mokkori Silom @ Narathiwat Soi 1

I love it when friends take me to off the beaten track eateries. Little treasures that just make you wonder what other secrets lay hidden waiting to be discovered. This latest discovery came quite unexpected for it was a chance meeting and we took the opportunity to go grab a bite to eat. In search of somewhere not too far from Silom, Narathiwat and the Rama IV area my friend navigated me to this little japanese eatery called “Sendai Ramen Mokkori Silom.” Don’t ask me what the name means. I only know “Ramen” and “Silom”(road name.) It’s one of those eateries you find in the least expected places. It’s at the base of an old-fashioned condominium at Narathiwat Soi 1. It seems to have been around for quite some time and probably well-known to those who go to that area, but for me it was an area I hardly go to and a street I’ve never driven into. Myth 10: Do not eat after dinner time

I love this myth. This is a myth that says one should not eat after a certain time if one wants to lose weight because food eaten later will turn into fat.  I think at a certain time during my chubby days I too tried this and guess what? I stayed chubby.  I still ate a lot and did not exercise and so yes, I remained chubby no matter what time I ate. Now the myth works for some people, because they end up eating less.  They tell themselves not to eat after a certain hour, and so mindless snacking is avoided.    Especially if you lived in an apartment like I did, the fridge was just convenient and easy access.  Watching TV, I could see the fridge and when you have nowhere to walk, (because the space is small)  you walk to the fridge.  You open the fridge and peek inside. Myth 9: Aluminum Foil is linked to Alzheimer's Disease

Okay, I still have two myths remaining about food.  This ninth myth is one that apparently some people still believe in even though it has been proven to not be true.   It started, according to the article, in the 1960's and1970's when research showed elevated levels of aluminum in patients with Alzheimer's disease.  This scared many from using aluminum pots, pans and foil to store food. If you are thinking to yourself, like I am now, " Oh no, I use those products all the time to store my food!," I have good news for you.  Subsequent research has failed to find a substantive link between aluminum and Alzheimer's Disease.   Experts say that aluminum absorbed by the body is processed by the kidneys and urinated out.  So fear not! Aluminum will not sicken you. No one yet knows the real cause of Alzheimer's disease so I think it's best not to get worried by 'myths' or other mistaken beliefs.  I think if you spend your life worr...

Myth 8: Seal Juices into Meats by Searing

Let's forget floods tonight and talk about cooking.  If you are a cook, and cook meat, then you are bound to have heard this, "Seal in the juices by searing meats before you cook."  For the non-cook, what does this mean?  It means basically to fry or expose the outer layer of meat to high temperatures before baking, or continuing to cook it.  My family does it, and so do my aunts.  I thought it made sense.  You cook the outer layer first, so that the raw juice would not be able to come out.  It's like one of those know-hows that gets passed down from generation to generation.  Lifehacker says this is not so.  Here's why. The article says that this was first proposed in the 19th century by a German chemist called Justus von Liebig who said that applying very high temperatures to meat would create a "sealed" layer of cooked meat through which liquid the inside meat would not be able to escape. Myth 7: Eating eggs will increase your cholesterol level.

Life goes on sitting and waiting for the flood. Lets talk about eggs today. A basic food staple that can give you energy during hard times are boiled eggs.  You can survive on rice and boiled eggs (as long as you do not get bored of it).  However, those with high cholesterol levels are often afraid of eating eggs for fear that it will push cholesterol levels up high. Some avoid it like it was some sort of disease. According to Alannah Dibona, eggs are not unhealthy and not a food that needs to be avoided like the plague.  Cholesterol comes from certain saturated fat and trans fat.  Eggs have very little saturated fat (1.5 grams of fat for a large egg) and no trans fat.  That means Yeah! I can eat more eggs. Eggs, in fact are quite healthy and have 13 naturally occuring vitamins and minerals.  Yes, you read it correctly, eggs are good for you.  You might ask, "Even the yolks that are supposed to have lots  of cholesterol?" ...

Myth 6: High sodium foods taste salty, so avoid salty tasting foods.

Yes, inner Bangkok will be flooded soon.  I say this because I believe I live in "inner" Bangkok.  I am not far from the BTS skytrain and lifestyle shopping areas.  Now, the "water" is a few kilometers away from my house.  My local supermarket where I go for monthly supplies without having to use the main road is starting to flood. It's taken so long to arrive.  I've been waiting for over two weeks. I have to admit I am not as excited as I thought I'd be. (Maybe when I actually see the water, I will start to be excited.) Yes, the flood waters are moving closer to Bangkok.  Everyone is getting a little nervous, me included.  When it rains, I can't help but wonder if that will mean one more line of defense has broken and that soon the waters will rush into the inner city area.  Let's pray that there be no more casualties.  When stressed I tend to eat more than I should.  It's like my brain decides that eating helps relieve stress.  However, it only helps short term for it ends up making me feel worried about having eaten too much.   I end up looking for healthy foods to eat, which brings me to the third myth.  The myth that low fat foods are always good for you. I'm sorry to have to be the one to break the news to you, but low fat foods are NOT always good for you. The last few days have been absolutely hectic as I've just started teaching, but now that all is settled today I get to relax and enjoy a few moments of peaceful writing.  It is indeed good for the mind and soul.  Today I write about a myth that is so common that I am sure many of you who cook have heard it before: adding salt to water changes the boiling point and lets you cook food faster.  I've heard this on cooking shows, read it in cooking books and yes I have to admit this is something I have believed in pretty much of my life until I read about it on Lifehacker. Suddenly, I am forced to question my belief regarding boiling water and cooking.  Are there other things I am mistakenly believing in? In our lives, sometimes we hear things, we read things and we live by it thinking it's right.  Sometimes it turns out it is just a myth.  So tonight, I'm going to start a little series about some common food myths. The first myth being that one should never use wooden cutting board for meat because they are full of bacteria. It is commonly believed that the sharp knife cutting into the board causes little scratches, through which later juices from meat settle into.  They become a breeding grown for bacteria that cannot be easily washed away.  As a result, wooden cutting boards become a 'no no.'  Plastic cutting boards are better.  Now some even say they are made with anti-microbial technology that ensures it remains bacteria free. Bangkok Lunch Trip: Seafood at Rabienta-Le, Bangpu

It's Friday evening and the weekend lies ahead.  When I get tired, when I need a holiday sometimes all it takes is a little day trip to revitalize the soul.  Just an hour outside of Bangkok and already it can make one feel relaxed. I see the big open sky high above me and somehow it dissolves away the hassles and tiredness of everyday life.  If you are wondering what to do this weekend, perhaps you can take a little trip to Bang pu (Bangpoo).  It's actually only around 45 minutes away and a good place to just go have a good lunch and come back refreshed. Gone Bananas

The world has gone bananas.  Bombings, shootings and phone hacking scandals are what dominate the headlines.  Everywhere I go, those are what people are reading about.  The world has indeed gone bananas.  If you can't already guess by now, I thought today I'd write about how good it is to actually go "bananas."  No, don't take me literally and go crazy,  what I want to say is eat bananas. Bangkok Dining: Brunch at "The Horse Says Moooo"

This past weekend, my friends and I went to try out a new restaurant.  Thanks to one of my dearest friends, who always seeks out wonderful new places, we get to try out new restaurants and eateries which aren't located in hotels and department stores.  Those are left for the days when you need a safe option.   This weekend we went to a Restaurant and Winebar on Sukhumvit  Soi 33 called "The Horse Says Mooo0." It's a strange name that really catches your attention and has everyone asking "What is the name again?" the first time they hear it.  That was certainly my reaction.  It is also a name that once you've heard it and been, it's hard to forget.  I definitely won't be forgetting it anytime soon (which I suppose is what the owners must want.) We went there for brunch, but they are also serve wine and beer and have live music along so the atmosphere must be quite different.  It seems to be ...

Bangkok dining: Taling Ping

 Since my good friends are out eating at Taling Ping today (which I have to skip due to a bad stomach)  I thought I'd write about this restaurant that is a great place to take guests from out of town or a place to have little reunions over authentic Thai food.  The great thing about this restaurant is that it has expanded from it's original location on Silom's Pun Road to the convenience of Siam Paragon and Central World Shopping Malls.  All within BTS access.  Wonderful if you are meeting friends who are coming from different parts of Bangkok. Taling Ping is somewhere I always take my guests from out-of-town for a relaxing dinner combined with some shopping.  It serves traditional Thai cuisine with a good ambiance and good service.  Make sure you get there early for the seats fill up quite quickly.  Their food is reliable and the taste is consistent no matter where or when you go.  There are a few favorites of mine at the restaurant....

Today I had a wonderful girls day out with a group of friends I've known since I was still in fifth grade.  Gosh it was a long time ago, but it's always good to see everyone again.  We use birthdays as an excuse to catch up, chit chat and try out new restaurants.  Today the birthday girl decided that we go try out this restaurant ontop of the Mini showroom called "The Garret." We all loved it and spent a good few hours there enjoying the company, the food, and the ambiance. Thank you for finding this place :) Now I'm a big fan of Mini Coopers which made the journey to the final destination that much more fun.   I got there early, walked around the showroom and immersed myself in the cuteness of Mini Cooper.  There's something about it that just makes you smile when you see it.  Especially when they are there sitting in rows as if it were waiting for me to just pop in and take a ride.  It pains me to think...

Restaurant Trip: Baan Nam Kieng Din

A few weeks ago I went for the first time to a restaurant not far from Bangkok that made me feel like a child again.  It's called Baan Nam Kieng Din, around 45 minutes drive and located on the beautiful Utayan road which is between Nakorn Chaisi and Phuttamonton.  It is very near to the Buddhist Park at Phuttamonton which has the highest standing buddha image in the world. Yes, it's incredibly big.  If you combine the dinner with the buddha image it makes a wonderful afternoon out. Anyways, this restaurant is wonderful in that it caters to people of all ages and when you go there, you feel like you escape the world a little and go on a little holiday.  The drive out under the big wide sky relaxes you and the spacious garden greets you upon arrival makes it feel fun and exciting.  The garden isn't just any garden, there are small ponds with a pair of black swans, enclosures with bunny rabbits running around and ducks of all sizes that just...

10 Tips on How to Get that Diet Started!

Now the year has started and the holiday festivities are slowing losing momentum (at least until the Chinese New Year) let's all start the year out being fit and healthy!    A lot of people start the year with a resolution to lose some weight and be healthy.  It often works for a couple months and then somehow the goal gets lost amidst all the work and whatever life brings us and we end the year having gained weight rather than having lost weight. That was me for probably more than a decade or so. No more.  It still feels surreal having lost 15kg (32 lbs).  This time last year, I was still working on my last few kgs. Wow. Bak Kut Teh at Outram Park Ya Hua Rou Gu Cha

I feel like I haven't been to Singapore if I haven't had Bak Kut Teh .  What is it?  It's pork rib soup.  What I love about it is that the soup has lots of pepper and as a meal it is not too heavy.  We have this dish also in the southern provinces of Thailand and in Malaysia but I have yet to try the ones there.   I think there will be slight variations.  There are lots of places to have Bak Kut Teh in Singapore, but my newest discovery is called " Outram Park Ya Hua Rou Gu Cha ."  It's a long name.  Don't ask me what it means.. "Cut": Steak to die for

On trips that bring you away from family and friends for a week or so things can get a little quiet (but that is significantly helped by the wonderful technology of Skype and sim cards.)  Of course, no technology can replace the warm feeling one gets when one is with close friends and I have to say that I feel especially fortunate to have such wonderful friends in Singapore who take great care of me.  From having the skinny pizza with Dalin, pepper and chilli crab with Mark, hot stones steak with my cousin to the wonderful steak house "Cut" with Rasina,  I have to say I am truly enjoying my stay in Singapore. Skinny Pizza at Fou de Fafa, Singapore

After a night here and a day full of activities and meeting people, I feel myself settling in and getting in pace for the next two weeks.  Being around the business district on weekends can be a bit quiet, almost isolated, but on weekdays there is a whole different energy. There are people walking around each going on their way, each with their own lives.  The energy then settles when we get to dinner time and everyone goes get something to fill their empty stomachs.   This past evening I got to reunite with a good old friend who lives here in Singapore and she introduced me to this new kind of pizza that is currently in trend in Singapore. It's called " Skinny pizza ." Now I've never heard anything about it, but it sounded delicious.
